Discover this coffee in detail

Finca La Gardenia, located at 1,900 metres above sea level in the mountains of Huehuetenango, is managed by Eddy McDonald, a producer who combines sustainability and quality in every detail.

Preserving the natural environment is one of the farm’s core principles, with protected forests, natural springs and local wildlife, including the iconic quetzzal.

This commitment has earned the farm certifications such as Rainforest Alliance.

For this Marsellesa variety lot, a carefully controlled natural process has been chosen.

The coffee cherries are harvested at peak ripeness and begin drying just a few hours after picking.

After five days drying under the sun on patios, the coffee completes a slow 22-day drying period on African beds, with constant turning to ensure a clean, sweet and remarkably expressive cup.

La Gardenia Marsellesa: when the landscape becomes part of the cup

A coffee born from the balance between nature and precision

Some coffees impress with their intensity, while others stand out for the sense of harmony they leave in every sip. La Gardenia Marsellesa belongs to the latter. Rather than seeking attention through extravagance, it expresses with clarity the place it comes from and the care with which it has been produced.

High in the mountains of Huehuetenango, one of Guatemala’s most prestigious coffee-growing regions, lies Finca La Gardenia, at an altitude of 1,900 metres. Here, Eddy McDonald and his family have built a project where coffee quality and environmental conservation move hand in hand. They are not separate goals, but two parts of the same philosophy.

Walking through the farm means discovering a landscape that has remained virtually untouched. The forests surrounding the coffee plots are preserved to protect biodiversity, the natural springs remain free from contamination, and it is not unusual to spot quetzals, Guatemala’s national bird and one of the country's most iconic natural symbols. This commitment to the environment has earned the farm certifications such as Rainforest Alliance, but beyond any label, it reflects a long-term vision of coffee farming.

Protecting nature, however, is only the starting point. Eddy devotes the same level of attention to every detail that influences the final quality of the cup. La Gardenia works with uncommon varieties and experiments with different processing methods to explore the full potential offered by Huehuetenango’s climate and altitude. The goal is not to create extravagant coffees, but to reveal the finest possible expression of each harvest.

For this lot, the chosen variety is Marsellesa, a coffee plant that combines disease resistance with an especially elegant sensory profile when grown under conditions like those found on this farm. To highlight its character, a carefully controlled natural process has been selected. The cherries are harvested only at peak ripeness and begin drying just a few hours after picking. They first spend several days drying in the sun before completing a slow drying phase on African beds, where constant turning allows the process to progress evenly and cleanly.

None of this work seeks the spotlight. Its true purpose is to disappear in the cup and allow the coffee itself to speak.

The result is a profile that combines sweetness, fruit and depth with remarkable naturalness. From the very first sip, notes of vanilla, forest berries and brown sugar emerge, supported by a creamy texture and a delicate acidity that brings freshness without overpowering the cup. It is an expressive yet elegant coffee, complex while remaining exceptionally approachable.

It is precisely this balance that makes La Gardenia Marsellesa a coffee you will want to return to. Every brew reveals subtle new nuances without ever losing its identity. It shines particularly well in filter brewing methods, where its clarity and sweetness can fully unfold, although it also delivers a refined espresso full of character.

More than a coffee defined by its processing method or variety, this lot reflects a place and the way one family has chosen to cultivate it. It is proof that when respect for nature and the pursuit of excellence go hand in hand, the result goes beyond technique and becomes an experience truly worth savouring.

Recetas para este café

Espresso

Here's our most up-to-date recipe. It's important to remember that this recipe is a reference and that many variables will influence the final result of the espresso in your cup: from the condition of your machine and grinder, the water you use, the storage/brewing time of your coffee, to the temperature/pressure, etc. Therefore, you may need to adjust some parameters to achieve a flavorful and balanced espresso based on your specific needs and equipment.

Recipe:

  • Ratio: 1:2.1
  • Dry: 18gr
  • In cup: 38gr
  • Time: 30-36s

Variables:

  • Resting time: minimum 2 weeks
  • Temperature: 94ºC
  • Pressure: 6 bars
  • Pre-infusion: No
  • GH 60 (ppm as CaCO3) KH 30 (ppm as CaCO3)

Machinery and equipment used for this recipe:

  • Espresso machine: La Marzocco PB 2GR

Gardenia Filter

The following recipe is a guide for preparing coffee at home. Results may vary depending on your equipment, settings, and all the variables that influence extraction.

With each coffee we roast, our team performs tests to find a recipe that highlights all the coffee's qualities. The one you'll see below includes all the necessary information to reproduce it. Still, we always recommend trying and experimenting to discover what you like best: use it as a guideline and adapt it to your liking.

Remember: the journey is what matters, not the destination.

Please note: Water is the most important factor in achieving a great cup of coffee. Depending on where you live, its composition can vary drastically. Therefore, we recommend using at least filtered water; another option is a mixture of Bezoya and Lanjarón. When adjusting the recipe, change only one variable at a time to identify how it influences the flavor.

It's common to start by adjusting the coffee-to-water ratio. Once you get a cup with a pleasant intensity and mouthfeel, you can modify other aspects of the extraction.

Most pour-over coffee recipes use a ratio between 1:15 and 1:17, with a brew time of 2:30 to 4:30 minutes.

Kalita / Origami / Orea

We have chosen this method to share our recipes because it is very versatile and easy to adapt to other pour-over systems. The flat bottom and wavy folds of Kalita filters create a wide surface that prevents significant flow blockages caused by the migration of fine particles or clogging.

Kalita/Origami/Orea

Recipe:

  • Ratio: 1:16
  • Coffee: 20g
  • Water: 315g
  • Total time: 3:20-3:50min
  • Temperature: 92ºC

Variables:

  • Resting time: Minimum 3 days after roasting, but expresses itself best after 8-20 days.
  • Water: 100% Bezoya
  • Filter: Kalita 185

Equipment:

Kalita/Origami/Orea, Kalita filter, Scale, timer, grinder, cup/decanter, and gooseneck kettle.

Method:

  1. Place the Orea on a cup/decanter and insert the filter. Pour hot water over it to eliminate paper taste and preheat the equipment.
  2. Grind the coffee to your recommended level.
  3. Discard the water, place the Orea on the scale, add the coffee distributing it evenly, tare the scale, and start the timer.
  4. Pour 60g of water in circular motions and wait 30-40 seconds for the coffee to bloom. If the coffee has been recently roasted, dedicate more time.
  5. Slowly pour water until approximately 200-250g, and swirl the Orea once to level the coffee bed and ensure it is fully saturated with water. Never fill to the brim; leave at least a 2 cm gap from the top to limit water bypassing the coffee bed, reducing extraction.
  6. Continue pouring water slowly as before until you have added the required amount of water.
  7. Swirl one last time and let the water drain.
  8. We are aiming for a total time according to the recipe. Adjust grind size next time if necessary.

Cold brew

[ Watch the recipe video ]

When making Cold Brew, we typically make larger quantities than with other brewing methods. So, we're providing a recipe for one liter of Cold Brew. If you want to make more or less than this amount, the ratio is 1:14; 1g of coffee for every 14g/ml of water.

Recipe and equipment:

Preparation:

  • Grind the coffee to a medium/coarse grind
  • Place the coffee directly into the filter of the pitcher or bottle
  • Pour the pre-weighed water into the pitcher or bottle
  • Stir gently to saturate all the coffee
  • Cover the container
  • Let it steep for 16-24 hours in the refrigerator (be careful with strong odors!)
  • After this steeping time, remove the filter with the coffee, and it's ready.

BONUS:

Bonus 1:You can do an additional filtration with a V60 paper filter, Kalita, cheesecloth, or something similar to get a cleaner and clearer result.

Bonus 2:For the best flavor, consume as soon as it's ready, as it will oxidize over time.

Bonus 3:Do not shake or press the coffee to avoid extracting bitter flavors or sediment.

Bonus 4:You can freeze Cold Brew into ice cubes and use them to chill your Cold Brew or for making other drinks.

Bonus 5:Food safety: wash your hands and utensils properly. Keep for a maximum of 3 days in the refrigerator in a glass container, preferably closed and without additives (sugar, milk, etc.).
